Country Cooking Keto Style

Today I am sharing some good ole country cooking recipes that the whole family will love.  Bet they ask for seconds.  In all recipes you may use and type of diet sugar.


Coleslaw

1head cabbage shredded

1/2 large carrot, peeled and shredded

2 Cups mayonnaise

1/2 cup Swerve powdered sugar or regular Swerve pulsed in food processor until powdery

1 teaspoon salt

1 teaspoon pepper

Toss cabbage and carrots.  Sprinkle with salt and let sit 15 minutes.  Add mayonnaise and remaining ingredients.  Refrigerate.

Cucumbers and Sour Cream

2 cucumbers peeled and sliced

1 onion (preferably sweet)

1/4 cup of Swerve

1/2 teaspoon salt

Pepper to taste

2 tablespoons vinegar

3 tablespoons half and half (you can use Coffeemate coffee creamer (no sugar)

Place cucumbers and onions n a bowl.  Add salt and let sit 13 minutes.  Add pepper.

In separate bowl add mayonnaise sugar vinegar and half and half.  Pour over cucumber mixture.  Refrigerate.  

If you like coleslaw without sugar add a teaspoon mustard and eliminate sugar.

Chicken and Dumplings 

1 whole chicken

1 tablespoon butter

1 1/2 teaspoons salt

pepper

1 egg beaten

1 tablespoon water

1 cup fine ground almond flour

1/2 cup half and half

1Boil chicken 1 hour, simmering after it comes to a boil.  Combine egg , water salt and butter. Make dough and cover with plastic wrap When chicken is done and remains at a boil over medium high heat add dumplings made by rolling dough and cutting into pieces. Reduce heat to simmer and cook, covered 30 minutes.  Add half and half just before serving.  Salt and pepper to taste.
